2 cups flour

1 tsp baking soda

2 cups sugar

  • 2 eggs
  • 1 tsp vanilla extract
  • 20 oz. crushed pineapple
  • Topping:
  • ½ cup butter
  • ½ tsp vanilla extract
  • 1 cup sugar
  • 1 cup pecans
  • 1 cup shredded coconut

Preheat oven to 350 degrees. Spray a 9×13 pan with nonstick spray. Stir cake ingredients well. Pour in to pan. Bake for 30-40 minutes. Remove from oven and poke holes in the top with a skewer. 

Combine butter, vanilla, and sugar in a small saucepan. Cook on medium high heat until thickened, 3-5 minutes. 

Remove mixture from heat and stir in pecans and coconut. Immediately pour over cake and let sink in. Broil for a minute or two to caramelize coconut. Let cool and serve.
